As I am looking in to developing Interactive Environments course @ AUS CAAD I have been advised to check the NETlab toolkit website led by Professor Philip van Allen an initiative of the Media Design Program at Art Center College of Design.

I have to say that this toolkit looks very user friendly and suitable for students who are to face designing for interactions for the first time.
